It's Fig'n Thyme for a Cocktail

We 'fig'-ured it was 'Thyme' for a cocktail - get it? OK enough of the puns, but seriously, this cocktail is delicious and will be a great addition to your drinking repertoire.
Fig and Thyme Syrup
Ingredients
250g Figs (finely sliced)
2 Bunches of Thyme
200g Caster sugar
Method
Combine the ingredients into two zip-lock bags (half the ingredients in each bag), jiggling them around in the bag until well mixed. Press out as much air from the bag as you can, then seal it. Let it sit at room temperature for 24 hours, gently pressing it from time to time to help dissolve sugar and extract fig juice.
Strain the syrup through a fine-meshed sieve, discarding the solids. The syrup can be stored in a jar or bottle in the refrigerator for up to 1 month.
'Thyme' for a Cocktail

Ingredients
15ml Fig and Thyme syrup
30ml Vodka
150ml Santolin Family Cider
Lemon wedge
Soda water
Method
Combine the Fig & Thyme syrup, Vodka, and Santolin Family Cider in a tumbler glass. Add a squeeze of lemon and top with soda water. Add ice and stir. Finish with a sprig of Thyme to garnish.
